Lasse Blackened Salmon

In this segment, chef Anthony Wood demonstrates to chef Lasse Sorensen, owner of Tom's Place in DeSoto, Illinois, how easy it is to prepare blackened salmon. First, preheat olive oil in a skillet on medium-high heat and add a bit of butter, if desired. Lightly season salmon fillets with Cajun seasoning, place in the pan, and give the skillet a light shake to prevent the fish from sticking.
