Michael Hatfield of Flyway Family Farm, a small, permaculture-based farm in Makanda, Ill. specializing in gourmet, nutrient-dense, organically grown mushrooms. Hatfield discusses the abundance of edible wild mushrooms in the forests of our region and demonstrates to members of the Southern Illinois Mushroom Co-Op how easy it is to grow their own mushrooms.
