Chili Prawns with Curry Sauce and Watermelon
|2 tbsp.||hot curry powder|
|2 oz.||apple juice|
|3 oz.||pineapple juice|
|6||1" cubed seedless watermelon|
|small bunch chopped cliantro|
|2 tbsp.||Chili garlic sauce|
Prepare curry sauce in one pan. Melt butter, and then add shallots, garlic, and curry powder. Cook about 2 minutes until tender. Add apple juice and simmer for another minute. Then add pineapple juice and the cream and let simmer until warm and steamy. This is not a thickened sauce!
While the curry sauce is starting to simmer, heat oil in another pan. Once hot, sauté the prawns and spoon chili garlic sauce into pan and work it onto the prawns during cooking process. Cook until prawns are firm and turn white. Don't over cook!
Spoon the curry sauce into bottom of small plate. Add prawns, garnish with watermelon, and top with cilantro.
Note: While this preparation is intended for one serving, there should be enough curry sauce left to cover a second dish. You easily double the prawns, garlic sauce, watermelon, and cilantro and use this recipe for two.
