Breakfast Hash
Hash
1/2 lb leftover steak
3 whole cooked medium potatoes
4 cooked stalks of asparagus
4 medium button mushrooms
1/2 large onion
2 tbsp. butter
Fried Egg
1 egg
1 tbsp. butter
Sauce
3 tbsp. A-1 sauce
2 tbsp. catsup
Chives for garnish

Directions:

Make hash by randomly dicing steak, potatoes, asparagus, mushrooms, and onion.
Sauté onion and mushroom in butter at high heat for about 2 minutes, then add steak, potatoes, and asparagus and sauté for another 2-3 minutes until potatoes start to slightly brown and all ingredients are heated through.

In a small bowl, wisk together A-1 sauce and catsup to create a sauce.

Fry an egg in butter (sunny side up). Should take about 2 minutes to cook at medium high heat.

Serve hash on plate. Garnish with dollops of sauce around edges of plate and chives. Top with an egg.
