- Whisk eggs in small bowl.
- Add salt and pepper to taste.
- Add a small about of chopped truffle.
- Pour mixture into heated skillet
- With spatula move cooked egg from the middle of the pan to the edges to allow uncooked portion of the egg to set. When egg is almost cooked, push with spatula to the edge of the pan to fold it.
- Place completed omelet on plate and garnish with a bit more thinly sliced and chopped truffle. Add chives if desired. Enjoy!
