Sesame Salmon
enough patties to accomodate guests Atlantic Salmon
  sesame seeds, toasted
  salt and pepper to taste
1/2 cup white wine

Directions:

  1. Completely coat filets with sesame seeds, salt and pepper
  2. Press seeds into fish
  3. Heat olive oil in pan
  4. Add filets, and cook as desired
  5. After salmon has finished cooking, remove from pan. Add wine to pan to heat

Fennel Slaw
1 Fennel bulb, sliced thin
1 mango, peeled and sliced thin
1 cucumber, cut in half, remove seeds (if desired) thinly slice
  rind of one medium orange
  juice of 1/2 medium orange
2 tbsp red wine vinegar
1 tbsp olive oil (not virgin)
1/4 red onion, slided thin

Directions:

  1. Put fennel, mango, and cucumber in a bowl
  2. Add orange rind
  3. Cut orange in half to add juice
  4. Add red wine vinegar and olive oil, toss
  5. Set slaw aside for 2 or more hours
  6. Before serving, add red onion. You may also chop fennel top and add to slaw.
  7. To serve, sprinkle plate with colorful spice of choice.
  8. Place bed of fennel salw on plate. Salmon is placed on top of the slaw.
