Summer Avocado Dish
8 leaves Fresh basil, chopped (set aside a few whole leaves for garnish)
3 avocado, peeled & halved
1 cup olive oli
1 cup red onion, chopped
1 tsp sugar
1 tsp salt
1 tsp ground white pepper
2 cups tomatoes, diced
1/2 cup red wine vinegar

Directions:

  1. On low heat, combine basil, olive oil, red onion, sugar, salt, white pepper, salt, tomatoes, and red wine vinegar. Let flavors combine.

  2. Allow dressing mixture to cool.

  3. When lukewarm, spoon dressing over avocado halves.

  4. Garnish with basil and sprinkle pepper around edge of plate, if desired.  Enjoy!
