Swedish Fish Soup (Serves 4)
400g Cod filet
(just under 1lb - can use any white fish)
1 Tbs salt
2 shallots
1/4 red bell pepper
4 Tbs butter
1 pinch black pepper
1 1/2 cups dry white wine
3/4 cup heavy cream
1/2 cube fish bouillion
1 cup water
  peel from 1/4 of a lemon


  1. Cut the fish filets in 1/2 inch pieces, salt, then set aside to rest.
  2. Chop the onion and parsley, grate the lemon peel, and chop the red bell pepper into small pieces.
  3. Melt 1 Tbsp butter in skillet. Sauté onion until translucent, add black pepper, bouillon and wine.
  4. Simmer the fish under low heat, approx. 4 minutes until barely done.
  5. Remove the fish with a skimmer and separate into servings in soup plates/bowls.
  6. Add heavy cream in the skillet together with the rest of the butter. Add parsley, lemon peel and red pepper. Warm while stirring and pour the bouillon over the fish.
  7. Serve with garlic bread
  8. Enjoy!
